Cooking ahead for Easter dinner tomorrow!

I always spend Easter at my parents’ house, and we always enjoy a delicious mid-day meal of ham sandwiches and assorted side dishes. Today I’ll be making baked beans (pinto, black, garbanzo, and butterbeans), cinnamon brownies (no “lamb cake” for us!) , and some sort of potato salad (I’m still deciding on that one). I’ll take all of these with me tomorrow morning when I travel across a couple of towns to spend the holiday with family.

How about you? What’s on your agenda for this fine Saturday? If you’ll be celebrating Easter tomorrow, how will you do so? Please share!

I love books, reading, writing, cooking, eating, reading while eating, and sharing thoughts about all of the above–plus a bit more! I usually post about topics relating to books and literacy during the week, and then participate in a variety of non-bookish memes on the weekend. Please feel free to join in! Some random things about me– –I have multiple bookshelves in every room of my home except the bathroom. They’re all filled to bursting. They help to make my house my home. –I have two cats who I love dearly, but who I definitely do NOT dress in human clothing. Ever. –I’ve never had a cavity. –I make a mean spaghetti sauce. –I’m a newcomer to yoga and I love it. –My day is not complete without a little chocolate.

  1. Some tasty ideas!! What I like about Easter is that it’s about good overcoming evil, life overcoming death and that transformation is possible, even from negative things. I wrote an essay about it:

  2. Yes! I will be cooking ahead for tomorrow too! Cinnamon brownies sound amazing! I’ll have to try that sometime.

    • They also have a tiny bit of cayenne pepper in them–it’s a new recipe I’m trying out. I just took them out of the oven and they smell fantastic!
      Hope your cooking goes well!

  3. We’re prepping for 14 dinner guests. Oy.

  4. Today was my usual zumba, washing and odd jobs, but it was so nice in my little arbour this afternoon that I just sat and read. Bliss!
I’m cooking tomorrow. Your lunch sounds very tasty. Enjoy the festivities 🙂

  5. Easter is all about family. Your lunch sounds wonderful. Enjoy!

  6. Our biggest celebration of Easter will be with our church family. The choir that my husband directs will be singing the cantata during the first service, followed by the Easter breakfast. Tonight, we are celebrating my parent’s and aunt’s birthdays at a restaurant near here since my sister from Arizona is in town.
